Cindy's Tip! In a hurry just cut the head of cauliflower into florets and place in a microwave bowl then add water to cover half. Set the timer for 7 minutes, drain then process!
Disclaimer! I like a little cheese on my pizza but feel free to omit. Sauté up some greens or top with left over chicken or meatballs. Go ahead make a pizza perfect for you!
I love using my 12inch Lodge cast iron pans! You can prepare, bake and serve out of these pan. I love one-pot recipes.
Preheat oven to 375 degrees F. Cut cauliflower into small size florets. (all the same size)
In a large pot add about 2 inches of water and add cauliflower, boil for about 20 minutes. Test the cauliflower with a fork for a softness. Drain and put in a bowl to cool down.
When cooked put cauliflower in through a ricer or use a food processor and grind until it looks like rice. Put cauliflower back in the bowl and add flour, olive oil, eggs, parsley, basil, cayenne pepper, garlic, salt and pepper. Combine together.
Drizzle your oven safe pan with oil then brush to create an even distribution. Add cauliflower mixture in the pan and use your hands lightly press. Bake for 25 minutes, take out of oven.
Top with pepperoni slices then cheese and bake for an additional 7 minutes or until cheese is melted and starting to brown. Let cool for a few minutes, slice and enjoy!
