I am enjoying creating recipes using amaranth and these cookies are the perfect afternoon treat!
Preheat oven to 350 degrees.
In a mixing bowl combine oats, amaranth, salt, almonds, macadamia nuts, dried cranberries and coconut together using a spoon.
Add in honey and egg whites then combine into the mixture. Stir mixture until well incorporated.
Line you baking sheet with parchment paper. Spoon a heaping tablespoon of mixture onto the baking sheet then firmly press together using your hands and form a cookies. You will get 12 cookies from this batch.
Bake for 17-18 minutes or until golden brown.
